Suya– skewered, spiced grilled meat that reflects Nigeria’s street-food culture
Nigerian Suya (Spicy Grilled Beef Skewers).

DESCRIPTION
Suya is a popular Nigerian street food made with thinly sliced beef, coated in yaji
(suya spice mix), skewered, and grilled over open flames. It’s smoky, spicy, nutty, and irresistibly addictive. It is served with sliced onions, tomatoes, cabbage, and
extra yaji on the side.

 

🍖INGREDIENTS
For the Beef:
● 1 kg of beef (sirloin, flank, or topside are ideal choices)
● Wooden skewers (soaked in water for 30 minutes prior to use)
For the Suya Spice (Yaji):
● 1 cup roasted ground peanuts (kuli-kuli powder works as a substitute)
● 2 tbsp ground cayenne pepper (adjust according to your heat preference)
● 1 tsp paprika (for color and a hint of sweetness)
● 1 tsp ground ginger
● 1 tsp ground garlic
● 1 tsp onion powder
● 1 crushed bouillon cube (Maggi or Knorr)
● ½ tsp salt (taste before adding, as the bouillon already contains salt)

For Brushing:
➜ 4 tbsp vegetable oil or groundnut oil.
For Serving 🍴:
● Sliced onions
● Sliced tomatoes
● Shredded cabbage
● Additional yaji spice

 

🫕 PREPARATION METHOD
Step 1: Preparing the Beef
1. Trim away any excess fat and sinew from the beef.
2. Slice the beef thinly against the grain—this is crucial for achieving tender suya.
3. Arrange the slices flat on a tray and gently pat them dry with a paper towel.

Step 2: Prepare the Yaji (Suya Spice)
1. In a mixing bowl, combine ground peanuts, cayenne pepper, paprika, ginger, garlic powder, crushed bouillon, and salt.
2. Stir the mixture well until all ingredients are evenly incorporated.
3. Taste the blend and adjust the pepper or salt according to your preference.

Step 3: Prepare the Beef
1. Gently brush each slice of beef with oil.
2. Generously apply the suya spice mix to both sides.
3. Press the spices into the meat to ensure they adhere properly.
󰰑 Note: For best results, cover and let marinate for 30 minutes to 1 hour (this step is optional but highly recommended).

Step 4: Prepare the Beef Skewers
● Carefully thread the beef slices onto the skewers, folding them gently to add some thickness.
● Avoid overcrowding the skewers to ensure even grilling.

 

Step 5: Grill the Suya
Traditional Method: 

➜ Grill over hot charcoal, turning frequently until the meat is cooked through and slightly charred.
Oven Method:
● Preheat your oven to 220°C (430°F).
● Arrange the skewers on a rack set over a tray.
● Grill for 10–15 minutes, turning them halfway through the cooking time.
Pan/Grill Pan Method:
➜ Cook on a hot grill pan, rotating until golden brown and infused with a smoky flavor.

 

Step 6: Final Touch
● Lightly brush the meat with oil while grilling to keep it juicy.
● Sprinkle additional yaji on top while still hot.
SERVING SUGGESTION 🍽
Serve immediately with fresh slices of onions, tomatoes, and cabbage.
